ON DEMAND MAZZER GRINDER
1 – Dial in / Adjust the grind size
- In order to adjust the size of the portion dispensed, use the “manual grinding” button.
- After having set the optimal degree of fineness, check the weight of the dose with a digital precision scale.
- Pull a shot and check the flow time with a stopwatch.
2 – Adjust the dose
- In order to adjust the dose press and hold the “menu button” for 3 seconds, until the display blink.
- Select the dose you wish to adjust
- The display will show the grinding time (in seconds) of the selected dose.
- By pressing the “adjustment buttons” ‘+’ and ‘-‘ you can increase or decrease the grinding time.
- Once you set the desired time, press and hold the “menu button” for 3 seconds, until the display blink.
Use a scale to check again. Repeat the operation if necessary.
Adjusting the grinder will alter the dosage. Each time you dial in you must use a scale to check the dosage.
Each time you dial in, grind a full basket, threw it away, then repeat this a second and third time, the grind a fourth basket which you will use it to check the flow time.

GRINDING
- A too coarse grind will reduce the contact time of the water and coffee which increase sour flavour.
- A too fine grind will increase the contact time of the water and coffee which increase bitter flavour.
- Adjusting the grinder to the right grind size will improve the extraction and strength of your espresso.
- Coffee losing 60% of its aromas within 15 minutes of grinding, on demand grinders are much better than dosing grinder.
- If you are using a dosing grinder, make sure that you grind as you go, mostly during slow time.
example : For an expresso which will reach its sweet spot at 23 seconds

EXTRACTION
The maximum amount you can extract or dissolve from a coffee bean is 30%. However the ideal extraction is 18-22%. The rest of the bean (70%) is fibre.
BREW CYCLE TIME OF AN ESPRESSO
Brew an espresso in 3 glasses. How? Brew from 0 to 12 sec in the first glass then, without stopping the extraction, very fast remove the first glass and put a second glass under the extraction until 17 sec, then remove it and very fast put a third glass under the extraction until the end of the extraction.
- From 0 sec to 14 sec – 1st glass: High solids
- From 15 sec to 19 sec – 2nd glass: Average solids
- From 20 sec to 25 sec – 3rd glass: Low solids
